I don't know about the 7 or 12 thing, but it's a pretty universal tradition to have seafood on Christmas Eve and meat on Christmas Day.

I would never have made it through the clam exercise without crying. I'm right there with you on the shrimp, though. After one memorable event that involved peeling and deveining about ten pounds of shrimp, I swore I would never handle shrimp poop again.
